Ingredients
- Tilapia fillet 5 oz
- Sweet potato 1 medium
- Green beans 1 cup
- Olive oil 1 tbsp
- Garlic powder 1/2 tsp
Method
-
Preheat oven and prepare sweet potato.
Preheat your oven to 425°F (220°C). Wash the sweet potato thoroughly and pat dry. Cut the sweet potato into 1/2-inch thick cubes to ensure even roasting.
Tip: Cutting the sweet potato into uniform pieces helps them cook evenly and faster. -
Season and roast sweet potato.
Place the sweet potato cubes on a baking sheet lined with parchment paper or foil. Drizzle half of the olive oil (1/2 tbsp) over the cubes and sprinkle 1/4 tsp garlic powder. Toss to coat evenly. Spread the cubes out in a single layer.
Tip: Avoid overcrowding the baking sheet to allow the sweet potatoes to roast rather than steam. -
Start roasting sweet potato.
Put the baking sheet with sweet potatoes into the preheated oven and roast for 15 minutes.
Tip: After 15 minutes, you will add the green beans and fish to the oven to cook together. -
Prepare green beans and tilapia.
While the sweet potatoes roast, wash and trim the ends of the green beans. Pat dry. Place green beans in a bowl and drizzle with remaining 1/2 tbsp olive oil and sprinkle the remaining 1/4 tsp garlic powder. Toss to coat. Season the tilapia fillet with a pinch of salt and pepper if desired.
Tip: Drying vegetables before roasting prevents them from steaming and helps them crisp up. -
Add green beans and tilapia to oven.
After the sweet potatoes have roasted for 15 minutes, remove the baking sheet from the oven. Push the sweet potatoes to one side. Add the green beans to the baking sheet in a single layer. Place the tilapia fillet on the sheet as well. Return to oven and bake for an additional 12-15 minutes, or until the fish is opaque and flakes easily with a fork, and green beans are tender-crisp.
Tip: Check the fish at 12 minutes to avoid overcooking; tilapia cooks quickly. -
Serve.
Remove the baking sheet from the oven. Transfer the baked tilapia, roasted sweet potatoes, and green beans to a plate. Serve immediately while hot.
Tip: Garnish with fresh herbs like parsley or a squeeze of lemon for extra flavor if desired.
Pro tips
