Prepare the rice.
Rinse 1 cup of uncooked jasmine rice under cold water until the water runs clear. Add the rinsed rice and 1.25 cups of water to a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.

Prepare the vegetables.
Wash and chop the mixed vegetables: cut broccoli into small florets, slice bell peppers into thin strips, and peel and slice carrots into thin rounds or matchsticks for even cooking.
