Ingredients
- lean beef strips 6 oz
- bell peppers 1 cup
- cauliflower rice 1 cup
- soy sauce 1 tbsp
- sesame oil 1 tsp
- garlic 2 cloves
- fresh ginger 1 tsp
- vegetable oil 1 tbsp
- salt to taste
- black pepper to taste
Method
-
Prepare Ingredients.
Begin by slicing the lean beef strips thinly against the grain to ensure tenderness. Slice the bell peppers into thin strips. Mince the garlic cloves and fresh ginger finely. If using fresh cauliflower, grate it to create cauliflower rice. If frozen, thaw it before cooking.
Tip: Slicing beef against the grain helps make it more tender when cooked. -
Cook the Beef.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the beef strips in a single layer. Let them sear without moving for about 1-2 minutes to develop a nice brown color, then stir and cook for another 2-3 minutes until browned and cooked through. Remove beef from the skillet and set aside.
Tip: Avoid overcrowding the pan to ensure the beef sears properly instead of steaming. -
Sauté Garlic, Ginger, and Bell Peppers.
In the same skillet, add the minced garlic and ginger. Stir quickly for about 30 seconds until fragrant but not burnt. Add the sliced bell peppers and cook for 3-4 minutes until they soften but still retain some crunch.
Tip: Keep stirring garlic and ginger so they don’t burn and turn bitter. -
Add Cauliflower Rice and Combine.
Add the cauliflower rice to the skillet with the bell peppers. Stir well to combine and cook for 3-4 minutes until the cauliflower rice is tender but not mushy.
Tip: If cauliflower rice releases water, increase heat slightly to evaporate excess moisture. -
Add Beef and Seasonings.
Return the cooked beef strips to the skillet. Drizzle the soy sauce and sesame oil over everything. Stir well to coat all ingredients evenly. Cook for another 1-2 minutes to heat through and allow flavors to meld. Taste and adjust salt and pepper as needed.
Tip: Add soy sauce gradually and taste to avoid over-salting. -
Serve.
Transfer the beef stir-fry with bell peppers and cauliflower rice to a plate. Serve immediately while hot.
Tip: Garnish with chopped green onions or sesame seeds if desired for extra flavor and presentation.
Pro tips
- Use a hot pan and don’t overcrowd to get a good sear on the beef.
- Prep all ingredients before cooking as stir-frying is a quick process.
- If you want more sauce, add a splash of beef broth or water mixed with a little cornstarch for thickening.
