Ingredients
- Lean beef strips 5 oz
- Mixed bell peppers 1 cup
- Carrots 0.5 cup
- Jasmine rice 1.25 cups
- Soy sauce 1 tbsp
- Olive oil 1 tbsp
Method
-
Prepare the Ingredients.
Wash the bell peppers and carrots thoroughly. Slice the bell peppers into thin strips and julienne or thinly slice the carrots. Slice the lean beef into thin strips if not pre-sliced. Measure out the soy sauce and olive oil. Have the cooked jasmine rice ready.
Tip: Cutting vegetables into uniform sizes helps them cook evenly. -
Heat the Pan.
Place a large non-stick skillet or wok over medium-high heat. Add 1 tablespoon of olive oil and allow it to heat until shimmering but not smoking.
Tip: A hot pan is essential for a good stir-fry to sear the meat quickly. -
Cook the Beef.
Add the beef strips to the hot pan in a single layer. Let them sear without moving for about 1-2 minutes to develop a nice brown color, then stir or toss to cook evenly for another 1-2 minutes until beef is mostly cooked through but still tender.
Tip: Avoid overcrowding the pan to ensure the beef sears properly instead of stewing. -
Add Vegetables.
Add the sliced bell peppers and carrots to the pan with the beef. Stir-fry everything together for about 3-4 minutes until the vegetables are tender-crisp but still vibrant in color.
Tip: Keep stirring frequently to prevent burning and to cook vegetables evenly. -
Add Soy Sauce and Combine.
Pour 1 tablespoon of soy sauce over the beef and vegetables. Stir well to coat everything evenly. Cook for an additional 1 minute to allow flavors to combine and the sauce to slightly reduce.
Tip: Taste and adjust seasoning if needed, adding a pinch of salt or pepper if desired. -
Serve with Jasmine Rice.
Divide the cooked jasmine rice between two plates or bowls. Spoon the beef and vegetable stir-fry on top or alongside the rice. Serve immediately while hot.
Tip: Garnish with chopped green onions or sesame seeds if you have them for extra flavor and presentation.
Pro tips
- Use a high smoke point oil like vegetable or canola oil if olive oil starts smoking.
- If you want more sauce, add a splash of beef broth or water mixed with a teaspoon of cornstarch to thicken.
