Ingredients
- Whole wheat tortilla 1 large
- Eggs 3 large
- Black beans (cooked) 0.5 cup
- Cheddar cheese (shredded) 1/4 cup
- Salsa 2 tbsp
- Olive oil 1 tsp
Method
-
Prepare Ingredients.
Gather all your ingredients. Crack the 3 large eggs into a bowl and whisk them well until the yolks and whites are fully combined. Drain and rinse the cooked black beans if needed.
Tip: Whisking the eggs thoroughly will help make them fluffy when cooked. -
Heat the Pan and Cook Eggs.
Place a non-stick skillet over medium heat. Add 1 teaspoon of olive oil and let it warm up for about 30 seconds. Pour the whisked eggs into the skillet. Let them sit undisturbed for about 20 seconds, then gently stir with a spatula, pushing the eggs from the edges toward the center. Continue to cook and gently fold the eggs until they are softly set but still moist, about 2-3 minutes.
Tip: Cook eggs on medium heat to avoid browning and to keep them tender. -
Warm Black Beans.
In a small saucepan or microwave-safe bowl, warm the 0.5 cup of cooked black beans until hot, about 1-2 minutes. Stir occasionally to heat evenly.
Tip: If using a saucepan, add a splash of water to prevent sticking. -
Warm the Tortilla.
Warm the whole wheat tortilla in a dry skillet over medium heat for about 30 seconds on each side until pliable and slightly toasted. Alternatively, wrap the tortilla in a damp paper towel and microwave for 15-20 seconds.
Tip: Warming the tortilla makes it easier to roll without cracking. -
Assemble the Burrito.
Lay the warm tortilla flat on a plate. Spread the scrambled eggs evenly in the center. Top with the warmed black beans, then sprinkle 1/4 cup shredded cheddar cheese over the beans and eggs. Add 2 tablespoons of salsa on top.
Tip: Distribute ingredients evenly for balanced flavor in every bite. -
Roll the Burrito.
Fold the sides of the tortilla inward over the filling. Then, starting from the edge closest to you, roll the tortilla tightly but gently to enclose all the fillings. Place the burrito seam side down on the plate to keep it closed.
Tip: Tight rolling helps keep the burrito intact while eating.
