Ingredients

  • large eggs 3 pieces
  • black beans 1/2 cup
  • whole wheat tortilla 1 piece
  • salsa 2 tbsp
  • shredded cheddar cheese 1/4 cup

Method

  1. Prepare ingredients. Gather all ingredients. Rinse and drain black beans if using canned. Crack the eggs into a bowl and whisk them until the yolks and whites are fully combined.
Tip: Whisking eggs well makes them fluffier when cooked.
  2. Cook black beans. Heat a small non-stick skillet over medium heat. Add the black beans and warm them for about 2 minutes, stirring occasionally. Remove from heat and set aside.
Tip: Warming beans enhances their flavor and texture.
  3. Scramble the eggs. In the same skillet, reduce heat to medium-low and add a small amount of oil or butter if desired. Pour in the whisked eggs. Let them sit undisturbed for about 20 seconds, then gently stir with a spatula, pushing eggs from the edges toward the center. Continue to cook and stir until eggs are softly set but still moist, about 2-3 minutes.
Tip: Remove eggs from heat just before fully cooked, as they will continue cooking from residual heat.
  4. Warm the tortilla. Place the whole wheat tortilla in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable. Alternatively, microwave for 15 seconds wrapped in a damp paper towel.
Tip: Warming the tortilla prevents cracking when folding.
  5. Assemble the burrito. Lay the warm tortilla flat. Spread the scrambled eggs evenly down the center. Top with warmed black beans, then spoon the salsa over the beans. Sprinkle shredded cheddar cheese on top.
Tip: Don’t overfill to make folding easier.
  6. Fold the burrito. Fold the sides of the tortilla over the filling, then roll from the bottom up tightly to enclose all ingredients. If desired, place the burrito seam side down in the skillet for 1 minute to seal and lightly toast.
Tip: Press gently while rolling to keep the filling secure.

Pro tips

  • Use a non-stick skillet to prevent eggs from sticking and make cleanup easier.
  • For extra flavor, add diced onions or bell peppers to the eggs before cooking.
