Ingredients
- Grilled chicken breast 6 oz
- Whole wheat bread 2 slices
- Avocado 1/4 medium
- Lettuce 1/2 cup
- Tomato slices 3 slices
Method
-
Prepare the Chicken Breast.
If your chicken breast is not already cooked, start by seasoning the 6 oz chicken breast with a pinch of salt and pepper. Heat a grill pan or skillet over medium heat and cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink inside. Remove from heat and let it rest for 5 minutes before slicing thinly.
Tip: Use a meat thermometer to check doneness for perfectly cooked chicken. -
Prepare the Avocado.
While the chicken is cooking, cut the avocado in half, remove the pit, and scoop out 1/4 of the avocado. Mash it gently with a fork in a small bowl until creamy but still slightly chunky.
Tip: Add a tiny squeeze of lemon juice to the avocado to prevent browning and add freshness. -
Prepare the Vegetables.
Wash the lettuce leaves thoroughly and pat them dry with a paper towel. Slice the tomato into 3 even slices.
Tip: Dry lettuce well to avoid soggy bread. -
Assemble the Sandwich.
Lay the two slices of whole wheat bread on a clean surface. Spread the mashed avocado evenly on one slice of bread. Layer the sliced grilled chicken on top of the avocado. Add the lettuce over the chicken, then place the tomato slices on top. Finally, cover with the second slice of bread.
Tip: Press the sandwich gently to help all ingredients stick together. -
Serve.
Cut the sandwich diagonally or in half as preferred. Serve immediately for the best taste and texture.
Tip: Pair with a side of fresh fruit or a light salad for a complete meal.
Pro tips
- If you prefer a warm sandwich, lightly toast the bread before assembling.
- Adding a small spread of mustard or light mayonnaise can enhance flavor without adding too many calories.
