Ingredients
- Chicken breast 120 g
- Brown rice 150 g
- Bell peppers 100 g
- Onion 50 g
- Black beans 50 g
- Salsa 2 tbsp
- Olive oil 1 tbsp
- Fajita seasoning 1 tsp
- Salt to taste
- Black pepper to taste
Method
-
Prepare the chicken.
Pat the chicken breast dry with paper towels. Season both sides evenly with fajita seasoning, salt, and black pepper. This will infuse the chicken with classic fajita flavors.
Tip: Use a small bowl to mix your fajita seasoning if you don't have a pre-made blend. -
Cook the chicken.
Heat half of the olive oil in a skillet over medium heat. Once hot, add the seasoned chicken breast. Cook for about 5-7 minutes on each side until the chicken is fully cooked (internal temperature should reach 165°F or 74°C). Remove from the pan and let rest for a few minutes before slicing.
Tip: Avoid flipping the chicken too often to get a nice sear. -
Sauté the vegetables.
In the same skillet, add the remaining olive oil. Add the sliced bell peppers and onions. Cook over medium heat, stirring occasionally, for about 5-7 minutes until the vegetables are tender but still slightly crisp. Season with a pinch of salt and pepper.
Tip: Use a wooden spoon to scrape up any browned bits left from cooking the chicken for extra flavor. -
Warm the black beans.
In a small saucepan or microwave-safe bowl, warm the black beans until heated through. This should take about 2-3 minutes. Drain any excess liquid before adding to the bowl.
Tip: If using canned beans, rinse them well to reduce sodium. -
Assemble the fajita bowl.
Start by placing the cooked brown rice at the base of your bowl. Arrange the sliced grilled chicken on top. Add the sautéed bell peppers and onions on one side and black beans on the other. Finally, spoon the salsa over the top to add freshness and a bit of zing.
Tip: Garnish with fresh cilantro or a squeeze of lime if you have it for extra brightness.
Pro tips
- Cook brown rice in advance and store it in the fridge to save time.
