Ingredients
- chicken breast 6 oz
- bell peppers 1 cup
- snap peas 0.5 cup
- quinoa 0.5 cup
- olive oil 1 tbsp
- soy sauce (low sodium) 1 tbsp

Prepare the quinoa.
If you haven't cooked the quinoa yet, rinse 1/4 cup dry quinoa under cold water using a fine mesh sieve. Then, add it to a small pot with 1/2 cup water. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and fluff with a fork. For this recipe, use 1/2 cup cooked quinoa.
Tip: Rinsing quinoa removes its natural bitter coating called saponin. -
Prepare the chicken.
Pat the chicken breast dry with paper towels. Cut it into thin, bite-sized strips to help it cook quickly and evenly.

Prepare the vegetables.
Wash the bell peppers and snap peas. Slice the bell peppers into thin strips and trim the snap peas by removing the ends and any stringy parts.
