Ingredients
- Egg whites 6 large
- Whole wheat tortilla 1 large
- Bell peppers 1/2 cup
- Onions 1/4 cup
- Olive oil 1 tsp
- Salsa 2 tbsp
Method
-
Prepare the vegetables.
Wash the bell peppers thoroughly. Remove the seeds and core, then dice into small pieces about 1/4 inch. Peel the onion and dice it finely. Having evenly diced vegetables helps them cook evenly.
Tip: Use a sharp knife to make dicing easier and safer. -
Sauté the vegetables.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat. Once hot, add the diced onions and bell peppers. Stir occasionally and cook for about 4-5 minutes until the vegetables are softened but still slightly crisp.
Tip: Don’t overcrowd the pan to ensure even cooking. -
Cook the egg whites.
Pour the 6 egg whites into the skillet with the sautéed vegetables. Stir gently and continuously with a spatula to scramble the egg whites evenly with the veggies. Cook for about 3-4 minutes until the egg whites are fully set but still moist.
Tip: Use low to medium heat to avoid overcooking and drying out the eggs. -
Warm the tortilla.
While the eggs are cooking, warm the whole wheat tortilla to make it pliable. You can do this by placing it in a dry skillet over medium heat for about 20 seconds on each side, or microwaving it wrapped in a damp paper towel for 15 seconds.
Tip: Warming the tortilla prevents cracking when you roll the burrito. -
Assemble the burrito.
Place the warm tortilla on a flat surface. Spoon the cooked egg white and vegetable mixture onto the center of the tortilla. Add 2 tablespoons of salsa on top of the filling for extra flavor.
Tip: Don’t overfill to make rolling easier. -
Roll the burrito.
Fold the sides of the tortilla over the filling, then roll it tightly from the bottom up to form a burrito. Make sure the filling is enclosed to prevent spilling.
Tip: Use your fingers to tuck in the filling as you roll for a neat burrito.
Pro tips
