Prepare the ingredients.
Wash the fresh spinach thoroughly under cold water to remove any dirt. Drain and pat dry with paper towels. Separate the egg whites from the yolks if you haven't bought them pre-separated, measuring out 6 large egg whites.
Tip: Dry spinach well to avoid excess water in the omelette. -
Cook the spinach.
Heat half the olive oil (1/2 tsp) in a non-stick skillet over medium heat. Add the spinach and sauté for 2-3 minutes until wilted and bright green. Remove the spinach from the skillet and set aside.

Cook the omelette.
