Ingredients
- Egg whites 6 large
- Spinach 1 cup
- Tomato 1 medium
- Mushrooms 1/2 cup
- Whole wheat bread 2 slices
- Butter 1 tsp
- Salt to taste
- Black pepper to taste
Method
-
Prepare the Vegetables.
Wash the spinach thoroughly under cold water to remove any dirt. Chop the tomato into small pieces and slice the mushrooms evenly. Set all the vegetables aside in a bowl.
Tip: Dry spinach well using a salad spinner or paper towels to avoid excess water in the omelette. -
Toast the Bread.
Place a non-stick skillet over medium heat. Add half a teaspoon of butter and let it melt. Once melted, add the two slices of whole wheat bread. Toast each side until golden brown, about 2 minutes per side. Remove from pan and set aside on a plate.
Tip: Keep an eye on the bread to avoid burning; adjust heat if necessary. -
Cook the Vegetables.
In the same skillet, add the remaining half teaspoon of butter and let it melt. Add the sliced mushrooms first and sauté for about 2 minutes until they start to soften. Then add the chopped tomato and spinach. Cook for another 2 minutes until the spinach wilts and the tomato softens slightly. Season lightly with salt and pepper if desired.
Tip: Cook vegetables on medium heat to retain their texture and flavor. -
Prepare the Egg Whites.
While the vegetables cook, crack the eggs and separate the whites into a bowl. Discard the yolks or save for another use. Whisk the egg whites gently until slightly frothy to help the omelette be fluffy.
Tip: Use a clean bowl and avoid any yolk in the whites for best results. -
Cook the Omelette.
Pour the whisked egg whites evenly over the cooked vegetables in the skillet. Spread gently to cover the pan surface. Let it cook undisturbed on medium-low heat for about 3-4 minutes until the egg whites are set and cooked through. You can cover the pan with a lid to help the top cook evenly.
Tip: Avoid stirring once poured to get a nice omelette shape. -
Serve.
Carefully slide the omelette onto a plate. Serve immediately with the toasted whole wheat bread on the side. Enjoy your healthy and delicious breakfast!
Tip: Add a pinch of freshly ground black pepper or herbs if desired for extra flavor.
Pro tips
