- Whole wheat bread 2 slices
- Eggs 2 large
- Skim milk 1/4 cup
- Blueberries 1/2 cup
- Non-fat Greek yogurt 1/2 cup
- Maple syrup 1 tbsp

Prepare the egg mixture.
In a shallow bowl, crack the 2 large eggs. Add 1/4 cup (60ml) of skim milk. Using a fork or whisk, beat the eggs and milk together until fully combined and slightly frothy. This mixture will soak the bread to make the French toast.
Tip: Make sure to whisk well so the eggs and milk are fully blended for even cooking. -
Soak the bread.
Take each slice of whole wheat bread and place it in the egg mixture. Let it soak for about 20-30 seconds on each side, allowing the bread to absorb the mixture but not become too soggy.
Tip: Use a fork or tongs to flip the bread gently to avoid tearing. -
Cook the French toast.
Heat a non-stick skillet or frying pan over medium heat. You can lightly spray or brush the pan with a little oil or butter if you like, but it is optional. Place the soaked bread slices onto the pan. Cook for about 2-3 minutes on each side, or until golden brown and cooked through.

Place the cooked French toast on plates. Top each serving with half of the blueberries and 1/4 cup of Greek yogurt. Drizzle 1/2 tablespoon of maple syrup over each portion for sweetness.
