Ingredients
- Whole wheat bread 2 slices
- Eggs 2 large
- Skim milk 1/4 cup
- Blueberries 1/2 cup
- Turkey bacon 3 slices
- Maple syrup 1 tbsp
Method
-
Prepare the egg mixture.
In a shallow bowl, crack the 2 eggs. Add the 1/4 cup of skim milk. Whisk together thoroughly until the mixture is smooth and well combined. This will be your batter for soaking the bread.
Tip: Use a fork or a whisk and whisk briskly to get a uniform mixture without streaks. -
Soak the bread.
Take each slice of whole wheat bread and dip it into the egg mixture. Let the bread soak for about 20 seconds on each side so it absorbs enough liquid but does not become too soggy.
Tip: Hold the bread gently and turn it carefully to avoid tearing. If your bread is very thick, soak a little longer. -
Cook the turkey bacon.
Place a non-stick skillet over medium heat. Lay the 3 slices of turkey bacon flat in the skillet. Cook for about 3-4 minutes on each side until they are browned and crispy to your liking. Remove from skillet and set aside on a paper towel to drain excess fat.
Tip: Keep an eye on the bacon to prevent burning and adjust heat if necessary. -
Cook the French toast.
In the same skillet (wipe out excess bacon fat if you want less fat), add a small amount of cooking spray or a little butter to prevent sticking. Place the soaked bread slices into the skillet over medium heat. Cook for about 3-4 minutes on each side until golden brown and cooked through.
Tip: Press lightly with a spatula to ensure even cooking and flip carefully. -
Plate and add toppings.
Place the cooked French toast on a plate. Sprinkle the fresh blueberries evenly over the top. Arrange the crispy turkey bacon slices alongside. Drizzle 1 tablespoon of maple syrup over the French toast and blueberries for sweetness.
Tip: Serve immediately while warm for the best flavor and texture.
Pro tips
- Use day-old bread for better soaking without falling apart.
- If you prefer richer French toast, substitute skim milk with whole milk or add a pinch of cinnamon or vanilla to the egg mixture.
