Ingredients
- Whole wheat bread 2 slices
- Eggs 2 large
- Skim milk 100 ml
- Mixed berries 100 grams
- Maple syrup 1 tablespoon
Method
-
Prepare the egg mixture.
In a shallow bowl, crack the 2 eggs. Add 100 ml of skim milk. Whisk them together until the mixture is smooth and slightly frothy. This will be the batter for soaking the bread.
Tip: Use a fork or small whisk to combine well, ensuring no egg whites remain separate. -
Soak the bread slices.
Take each slice of whole wheat bread and dip it into the egg mixture. Let it soak for about 20 seconds on each side so the bread absorbs the mixture but doesn't become too soggy.
Tip: Hold the bread gently to avoid tearing; soak evenly on both sides. -
Cook the French toast.
Heat a non-stick pan or skillet over medium heat. You can lightly spray or brush a little oil or butter to prevent sticking. Place the soaked bread slices on the pan. Cook each side for about 2-3 minutes or until golden brown and cooked through.
Tip: Cook on medium heat to ensure the inside cooks without burning the outside. -
Prepare the berries.
While the bread cooks, rinse the mixed berries if fresh. If frozen, ensure they are thawed and drained. You can lightly mash some of the berries to release their juices for extra flavor.
Tip: Use a fork to gently mash berries if desired. -
Serve and garnish.
Place the cooked French toast slices on a plate. Top with the mixed berries evenly. Drizzle 1 tablespoon of maple syrup over the top. Serve immediately to enjoy warm.
Tip: Add a sprinkle of cinnamon or powdered sugar for extra flavor if you like.
Pro tips
- Use day-old bread for better soaking; fresh bread can become too soggy.
- Preheat the pan well before cooking to get a nice golden crust.
