Ingredients
- Chicken breast 6 oz
- Bell peppers 1 cup
- Onion 0.5 cup
- Couscous 1 cup
- Olive oil 1 tbsp
- Salt 0.5 tsp
- Black pepper 0.25 tsp
- Garlic powder 0.25 tsp
- Wooden or metal skewers 4 pieces
Method
-
Prepare the Ingredients.
Wash the bell peppers and onion. Cut the chicken breast into 1-inch cubes. Chop the bell peppers and onion into similar-sized pieces to ensure even cooking.
Tip: Try to keep the pieces uniform so they cook evenly on the grill. -
Marinate the Chicken and Vegetables.
In a bowl, combine chicken cubes, bell peppers, and onion. Add 1/2 tablespoon of olive oil, salt, black pepper, and garlic powder if using. Mix well to coat all pieces evenly.
Tip: Marinate for at least 10 minutes if you have time, to enhance the flavor. -
Prepare the Skewers.
Thread the chicken and vegetables alternately onto the skewers. For example, start with a piece of chicken, then bell pepper, then onion, and repeat until the skewer is full but not overcrowded.
Tip: Leave a little space between pieces to allow heat to circulate for even cooking. -
Preheat the Grill.
Preheat your grill or grill pan to medium-high heat. Brush the grill grates with a little olive oil to prevent sticking.
Tip: If using a grill pan indoors, heat it until it is very hot before adding the skewers. -
Grill the Kebabs.
Place the skewers on the grill. Cook for about 6-7 minutes on each side, turning carefully with tongs, until the chicken is fully cooked (internal temperature 165°F / 74°C) and the vegetables are tender and slightly charred.
Tip: Avoid moving the skewers too often to get nice grill marks. -
Cook the Couscous.
While the kebabs are grilling, prepare the couscous according to package instructions. Typically, bring water to a boil, add couscous, cover, and let it sit for 5 minutes, then fluff with a fork. Drizzle with remaining olive oil and season with a pinch of salt.
Tip: Use broth instead of water for more flavor if you like. -
Serve.
Plate the grilled chicken and vegetable kebabs alongside the fluffy couscous. Optionally, garnish with fresh herbs like parsley or a squeeze of lemon juice for extra brightness.
Tip: Serve immediately while hot for best taste.
Pro tips
- Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
