Ingredients
- Chicken breast 6 oz
- Quinoa 1 cup
- Broccoli 1.5 cups
- Olive oil 1 tbsp
- Salt to taste
- Black pepper to taste
Method
-
Prepare the Chicken Breast.
Start by patting the chicken breast dry with paper towels to remove excess moisture. This helps achieve a nice sear when grilling. Lightly season both sides with salt and black pepper.
Tip: Dry chicken cooks better and prevents sticking. -
Heat the Grill or Pan.
Preheat your grill or a grill pan over medium-high heat. If using a pan, add half the olive oil (1/2 tbsp) and allow it to heat until shimmering but not smoking.
Tip: Proper preheating ensures even cooking and good grill marks. -
Grill the Chicken.
Place the chicken breast on the grill or pan. Cook for about 6-7 minutes on one side without moving it to get nice grill marks. Then flip and cook for another 6-7 minutes until the internal temperature reaches 165°F (75°C) and juices run clear.
Tip: Use a meat thermometer to check doneness for safety. -
Cook the Quinoa.
While the chicken cooks, prepare the quinoa if not already done. Rinse 1/3 cup dry quinoa under cold water to remove bitterness. Combine with 2/3 cup water in a small pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork.
Tip: Rinsing quinoa improves flavor and texture. -
Steam the Broccoli.
Cut broccoli into florets if not pre-cut. Place in a steamer basket over boiling water, cover, and steam for 5-7 minutes until bright green and tender but still slightly crisp.
Tip: Do not oversteam to preserve nutrients and texture. -
Combine and Serve.
Drizzle the remaining 1/2 tbsp olive oil over the cooked quinoa and steamed broccoli for flavor. Plate the grilled chicken breast alongside the quinoa and broccoli. Optionally, season with a pinch more salt and pepper to taste.
Tip: Let the chicken rest for a few minutes before slicing to keep it juicy.
Pro tips
- Use a meat thermometer to ensure chicken is fully cooked but not overdone.
- Rinsing quinoa before cooking removes its natural coating, reducing bitterness.
