Ingredients
- Chicken breast 5 oz
- Cauliflower florets 1.5 cups
- Wild rice 3/4 cup
- Olive oil 1 tbsp
- Garlic powder 1/2 tsp
Method
-
Prepare the cauliflower.
Preheat your oven to 425°F (220°C). Place 1.5 cups of cauliflower florets in a mixing bowl. Drizzle with half of the olive oil (about 1/2 tablespoon) and sprinkle with 1/2 teaspoon garlic powder. Toss well to coat evenly.
Tip: Make sure the cauliflower florets are spread in a single layer on the baking sheet for even roasting. -
Roast the cauliflower.
Arrange the seasoned cauliflower florets on a baking sheet lined with parchment paper or foil. Roast in the preheated oven for 25-30 minutes, turning halfway through, until golden brown and tender.
Tip: Turning the florets halfway helps them roast evenly and develop a nice caramelized flavor. -
Cook the wild rice.
While the cauliflower roasts, prepare the wild rice if not already cooked. Use 3/4 cup cooked wild rice per serving. To cook, rinse 1/4 cup dry wild rice per serving, then simmer in 1 cup water for about 45-50 minutes until tender and water is absorbed. Drain any excess water.
Tip: Cooking wild rice ahead of time saves meal prep time. You can reheat it gently before serving. -
Prepare the chicken breast.
Pat the 5 oz chicken breast dry with paper towels. Brush both sides with the remaining 1/2 tablespoon olive oil and season lightly with salt and pepper if desired. Preheat a grill pan or outdoor grill over medium-high heat.
Tip: Drying the chicken helps achieve a nice sear when grilling. -
Grill the chicken.
Place the chicken breast on the hot grill. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and juices run clear. Remove from heat and let rest for 5 minutes before slicing.
Tip: Resting the chicken keeps it juicy and tender. -
Assemble and serve.
Divide the grilled chicken breast, roasted cauliflower, and cooked wild rice evenly onto plates. Serve warm and enjoy your balanced, flavorful meal.
Tip: Garnish with fresh herbs like parsley or a squeeze of lemon for extra brightness if desired.
Pro tips
