Ingredients

  • Whole wheat tortilla 1 large (60g)
  • Chicken breast 6 oz (170g)
  • Hummus 2 tbsp (30g)
  • Bell peppers 0.5 cup (about 42g)
  • Lettuce 0.5 cup (about 43g)
  • Olive oil 1 tbsp
  • Salt 0.5 tsp
  • Black pepper 0.25 tsp

Method

  1. Prepare the chicken. Pat the chicken breast dry with paper towels. Season both sides evenly with salt and black pepper. This will enhance the flavor during grilling.
Tip: Drying the chicken helps it brown better on the grill.
  2. Grill the chicken. Heat a grill pan or outdoor grill over medium-high heat. Brush the grill with olive oil to prevent sticking. Place the chicken breast on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for 5 minutes.
Tip: Letting the chicken rest helps keep it juicy.
  3. Prepare the vegetables. While the chicken is grilling, wash and slice the bell peppers into thin strips. Chop the lettuce into bite-sized pieces. Mix them together in a small bowl.
Tip: Use a sharp knife for clean cuts and to avoid bruising the veggies.
  4. Slice the chicken. After resting, slice the grilled chicken breast into thin strips. This will make it easier to wrap and eat.
Tip: Slice against the grain for tender pieces.
  5. Assemble the wrap. Lay the whole wheat tortilla flat on a clean surface. Spread the hummus evenly over the center of the tortilla. Add the mixed veggies on top of the hummus, then place the sliced chicken strips over the veggies. Fold the sides of the tortilla over the filling, then roll tightly from the bottom up to form a wrap.
Tip: Don’t overfill to avoid tearing the tortilla.
  6. Serve and enjoy. Cut the wrap in half diagonally if desired, and serve immediately while the chicken is still warm.
Tip: Pair with a side of fresh fruit or a light salad for a complete meal.

Pro tips

  • If you don't have a grill pan, you can cook the chicken in a regular skillet over medium heat.
  • Warm the tortilla slightly in a dry pan or microwave for 10 seconds to make it more pliable and easier to roll.
