Ingredients
- grilled salmon 6 oz
- mixed salad greens 2 cups
- avocado 0.5 whole
- quinoa 1/3 cup
- olive oil 1 tbsp
- lemon juice 1 tbsp

Cook the Quinoa.
If you don’t have cooked quinoa ready, rinse 1/4 cup dry quinoa under cold water to remove bitterness. Combine it with 1/2 cup water in a small pot, bring to a boil, then reduce heat to low and simmer covered for about 15 minutes until water is absorbed. Fluff with a fork and let it cool.
Tip: Cooking quinoa ahead and cooling it helps keep the salad fresh and the grains fluffy. -
Prepare the Salmon.
If your salmon isn’t grilled yet, season the 6 oz salmon with salt and pepper. Heat a grill pan or outdoor grill to medium-high heat. Grill the salmon for about 4-5 minutes on each side until cooked through and flaky. Let it rest for a few minutes, then cut into bite-size pieces.
