Ingredients
- Salmon fillet 6 oz
- Barley 1 cup cooked
- Asparagus 1 cup steamed
- Olive oil 1 tbsp

Prepare the Barley.
If you don't have cooked barley ready, rinse 1/3 cup dry pearled barley under cold water. Add it to a pot with 1 cup of water, bring to a boil, then reduce heat and simmer covered for about 25-30 minutes until tender. Drain any excess water and set aside to cool. For this recipe, use 1 cup of cooked barley.
Tip: You can cook barley in advance and refrigerate it for up to 3 days. -
Prepare the Asparagus.
Wash and trim the woody ends off the asparagus. Bring a pot of water to boil and steam the asparagus for about 4-5 minutes until tender but still crisp. Alternatively, you can steam them in a steamer basket over boiling water.

Preheat the Grill or Pan.
