Ingredients
- Ground turkey 5 oz
- Romaine lettuce leaves 3 large leaves
- Black beans 1/3 cup
- Corn kernels 1/3 cup
- Onion 1/4 cup
- Olive oil 1 tsp
- Cumin 1/2 tsp
- Chili powder 1/2 tsp
Method
-
Prepare Ingredients.
Wash the romaine lettuce leaves gently under cold water and pat them dry with a paper towel. Dice the onion finely. If using canned black beans, rinse and drain them well. Measure out the corn kernels.
Tip: Dry lettuce leaves thoroughly to prevent sogginess when serving. -
Cook the Onion.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat. Add the diced onion and sauté for about 3 minutes until translucent and fragrant.
Tip: Stir frequently to prevent the onion from burning. -
Brown the Ground Turkey.
Add the ground turkey to the skillet with the onions. Use a spatula to break the meat into small pieces. Cook for about 6-7 minutes until the turkey is no longer pink and cooked through.
Tip: Cook thoroughly to an internal temperature of 165°F (74°C) for safety. -
Add Beans, Corn, and Spices.
Stir in the black beans, corn kernels, cumin, and chili powder into the cooked turkey mixture. Cook for an additional 2-3 minutes, stirring occasionally, to heat everything through and allow the spices to blend.
Tip: Taste and adjust seasoning if desired by adding a pinch of salt or pepper. -
Assemble the Lettuce Wraps.
Spoon the turkey, bean, and corn mixture evenly onto the center of each romaine leaf. Fold the leaves around the filling to make wraps.
Tip: Serve immediately to enjoy the crispness of the lettuce.
