Ingredients
- lean ground chicken 5 oz
- butter lettuce leaves 4 large
- cooked brown rice 1/2 cup
- soy sauce (low sodium) 1 tbsp
- chopped green onions 2 tbsp
- olive oil 1 tbsp
- minced garlic 1 clove
Method
-
Prepare Ingredients.
Wash the butter lettuce leaves gently under cold water and pat them dry with a clean kitchen towel or paper towels. Chop the green onions finely and mince the garlic clove if not already done.
Tip: Dry lettuce leaves well to prevent sogginess in the wraps. -
Cook the Ground Chicken.
Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it. Add the lean ground chicken to the skillet, breaking it apart with a spatula. Cook for about 6-8 minutes until fully cooked and no longer pink, stirring occasionally.
Tip: Use a spatula to break the chicken into small pieces for even cooking. -
Season the Chicken.
Once the chicken is cooked through, add 1 tablespoon of low sodium soy sauce and the chopped green onions. Stir well to combine and cook for another 1-2 minutes so the flavors meld together.
Tip: Taste and adjust seasoning if needed, but keep soy sauce low to maintain sodium control. -
Warm the Brown Rice.
If your cooked brown rice is cold, warm it gently in the microwave or on the stovetop until heated through. This will make the wraps more enjoyable to eat.
Tip: Add a splash of water when reheating rice to keep it moist. -
Assemble the Lettuce Wraps.
Lay out the butter lettuce leaves on a plate. Spoon an even amount of the cooked brown rice onto each leaf, then top with the seasoned ground chicken mixture. Fold or roll the lettuce leaves around the filling to form wraps.
Tip: Use the largest leaves for easier wrapping and less spillage.
Pro tips
- For extra crunch, add finely chopped water chestnuts or shredded carrots to the chicken mixture.
- If you prefer a little heat, add a dash of chili flakes or sriracha sauce when seasoning the chicken.
