Ingredients

- Brussels sprouts 1 cup
- barley 1/2 cup
- olive oil 1 tbsp
- fresh rosemary 1 tsp
- garlic 1 clove

Prepare the Brussels sprouts.
Preheat your oven to 400°F (200°C). Rinse 1 cup of Brussels sprouts under cold water, trim the ends, and cut them in half. Place them in a bowl and toss with half the olive oil (1/2 tbsp), salt, pepper, half the minced garlic, and half the chopped rosemary.

Roast the Brussels sprouts.
Spread the seasoned Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until they are golden brown and tender.

Cook the barley.
