Ingredients
- Pork loin (roasted) 120 g
- Potatoes (boiled, mashed) 150 g
- Broccoli (steamed) 1 cup
- Olive oil 1 tsp
- Garlic powder to taste
- Salt to taste
- Black pepper to taste
Method
-
Prepare the potatoes.
Peel the potatoes and cut them into evenly sized chunks about 1.5 inches each. Place them in a pot and cover with cold water. Add a pinch of salt. Bring to a boil over medium-high heat and cook until tender when pierced with a fork, about 15-20 minutes.
Tip: Start with cold water to ensure even cooking and prevent the outside from becoming mushy before the inside cooks. -
Steam the broccoli.
While the potatoes boil, wash the broccoli and cut into florets. Place a steamer basket over boiling water, add broccoli, cover, and steam for 5-7 minutes until bright green and tender-crisp.
Tip: Avoid overcooking broccoli to retain nutrients and vibrant color. -
Warm the pork loin.
If using pre-roasted pork loin, slice it into 120g portions and warm gently in a pan over low heat with a small drizzle of olive oil for about 5 minutes, seasoning with garlic powder, salt, and pepper to taste. If roasting fresh, preheat oven to 375°F (190°C), season pork with garlic powder, salt, and pepper, and roast for about 25-30 minutes until internal temperature reaches 145°F (63°C). Let rest 5 minutes before slicing.
Tip: Use a meat thermometer to ensure pork is cooked safely but remains juicy. -
Mash the potatoes.
Drain the cooked potatoes well and return them to the pot or a bowl. Add 1 teaspoon olive oil, salt, pepper, and a pinch of garlic powder. Mash with a potato masher or fork until creamy but still slightly textured.
Tip: Avoid over-mashing to prevent gluey texture; a little texture is pleasant. -
Plate and serve.
Arrange the pork loin slices on the plate. Add a serving of mashed potatoes and steamed broccoli. Optionally drizzle a little olive oil over the broccoli for flavor. Serve immediately while warm.
Tip: Garnish with freshly ground black pepper or a sprinkle of herbs if desired.
Pro tips
- Use a meat thermometer to check pork doneness to avoid overcooking.
- Start potatoes in cold water to ensure even cooking and prevent mushiness.
