Ingredients
- Pork tenderloin 4 oz
- Sweet potato 1 medium
- Green beans 1 cup
- Olive oil 1 tsp
Method
-
Preheat oven and prepare sweet potato.
Preheat your oven to 400°F (200°C). Wash the sweet potato thoroughly to remove any dirt. Pat it dry with a towel. Pierce the sweet potato several times with a fork to allow steam to escape while baking. Place it on a baking sheet.
Tip: Piercing the sweet potato prevents it from bursting in the oven. -
Start baking the sweet potato.
Place the sweet potato in the preheated oven and bake for about 35 minutes, or until it is tender when pierced with a fork.
Tip: While the sweet potato bakes, you can prepare the pork and green beans. -
Prepare the pork tenderloin.
While the sweet potato is baking, pat the pork tenderloin dry with paper towels. This helps it brown nicely. Rub the pork all over with half of the olive oil and season with salt and pepper if desired.
Tip: Drying the meat helps achieve a good sear. -
Roast the pork tenderloin.
Heat a skillet over medium-high heat. Add the remaining olive oil. When hot, add the pork tenderloin and sear it on all sides until browned, about 2 minutes per side. Then transfer the pork to a baking dish and roast in the oven (can be alongside the sweet potato) for about 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
Tip: Use a meat thermometer to check doneness for safety and juiciness. -
Steam the green beans.
While the pork roasts, bring a pot of water to a boil and place a steamer basket over it. Add the green beans to the basket, cover, and steam for about 5-7 minutes until tender but still crisp. Drain and season lightly with salt if you like.
Tip: Avoid overcooking to keep green beans bright and crisp. -
Rest the pork and assemble the plate.
Once the pork is cooked, remove it from the oven and let it rest for 5 minutes to allow juices to redistribute. Slice the pork into medallions. Serve alongside the baked sweet potato (you can cut it open and fluff the inside with a fork) and steamed green beans.
Tip: Resting meat makes it juicier and more flavorful.
Pro tips
- Use a meat thermometer to ensure pork is cooked safely and remains juicy.
- You can cook the pork and sweet potato together in the oven to save time and energy.
