Ingredients
- Whey protein powder 1 scoop (30g)
- Rolled oats 1/4 cup (20g)
- Egg whites 3 large
- Mixed berries 1/2 cup (75g)
- Baking powder 1/2 teaspoon
Method
-
Prepare Ingredients.
Gather all ingredients. If using frozen berries, let them thaw at room temperature or microwave briefly. Separate egg whites from yolks carefully, placing whites in a clean bowl.
Tip: Use a clean, dry bowl for egg whites to help them whip better if needed. -
Make the Batter.
In a blender or food processor, add rolled oats and blend until they become a fine flour. Add whey protein powder, baking powder, and egg whites. Blend everything together until smooth and well combined.
Tip: If you don’t have a blender, you can finely grind oats with a rolling pin and mix all ingredients in a bowl with a whisk. -
Heat the Pan.
Place a non-stick skillet or frying pan over medium heat. Lightly grease with a small amount of oil or cooking spray to prevent sticking.
Tip: Test pan temperature by sprinkling a drop of water; it should sizzle gently. -
Cook the Pancakes.
Pour about 1/4 cup of batter onto the pan to form each pancake. Cook for 2-3 minutes until bubbles form on the surface and edges look set. Flip carefully and cook the other side for another 1-2 minutes until golden brown and cooked through.
Tip: Use a thin spatula to flip gently to avoid breaking the pancakes. -
Serve with Berries.
Place cooked pancakes on a plate and top with mixed berries. Optionally, add a drizzle of honey or a dollop of Greek yogurt for extra flavor.
Tip: Serve immediately for best texture and flavor.
Pro tips
- Use a blender to get a smooth batter for fluffy pancakes.
- Don’t overcrowd the pan to allow even cooking.
