Ingredients

  • Whole wheat flour 1/2 cup
  • Whey protein powder 30 g
  • Egg 1 large
  • Strawberries 1/2 cup
  • Baking powder 1 tsp
  • Water 1/2 cup
  • Cooking oil or butter 1 tbsp

Method

  1. Prepare the strawberry compote. Place the strawberries in a small saucepan over medium heat. Cook them gently, stirring occasionally, until they break down and release their juices, about 7-8 minutes. You can mash them slightly with a spoon to create a chunky compote. Once done, remove from heat and set aside.
Tip: If you like sweeter compote, add a teaspoon of honey or sugar while cooking.
  2. Mix dry ingredients. In a medium bowl, combine the whole wheat flour, whey protein powder, and baking powder. Stir well to evenly distribute the baking powder.
Tip: Sifting the dry ingredients can help avoid lumps.
  3. Add wet ingredients and mix batter. Crack the egg into the bowl with dry ingredients. Add 1/2 cup of water. Whisk everything together until you get a smooth batter without lumps. The batter should be thick but pourable. If it’s too thick, add a little more water, one tablespoon at a time.
Tip: Use room temperature egg and water for better mixing.
  4. Heat the pan and cook pancakes. Heat a non-stick skillet or griddle over medium heat. Add a small amount of cooking oil or butter and spread it evenly. Pour about 1/4 cup of batter onto the pan for each pancake. Cook for 2-3 minutes until bubbles form on the surface and edges look set. Flip carefully and cook the other side for another 2 minutes until golden brown.
Tip: Avoid pressing down on pancakes while cooking to keep them fluffy.
  5. Serve with strawberry compote. Place the cooked pancakes on plates and spoon the warm strawberry compote over them. Enjoy immediately for the best taste and texture.
Tip: Add a dollop of Greek yogurt or a sprinkle of nuts for extra flavor and texture.

Pro tips

  • Use a non-stick pan and moderate heat to prevent pancakes from burning.
  • Let the batter rest for 5 minutes before cooking to improve texture.
