Ingredients
- Whole wheat flour 1/2 cup
- Whey protein powder 30 g
- Egg 1 large
- Strawberries 1/2 cup
- Baking powder 1 tsp
- Water 1/2 cup
- Cooking oil or butter 1 tbsp
Method
-
Prepare the strawberry compote.
Place the strawberries in a small saucepan over medium heat. Cook them gently, stirring occasionally, until they break down and release their juices, about 7-8 minutes. You can mash them slightly with a spoon to create a chunky compote. Once done, remove from heat and set aside.
Tip: If you like sweeter compote, add a teaspoon of honey or sugar while cooking. -
Mix dry ingredients.
In a medium bowl, combine the whole wheat flour, whey protein powder, and baking powder. Stir well to evenly distribute the baking powder.
Tip: Sifting the dry ingredients can help avoid lumps. -
Add wet ingredients and mix batter.
Crack the egg into the bowl with dry ingredients. Add 1/2 cup of water. Whisk everything together until you get a smooth batter without lumps. The batter should be thick but pourable. If it’s too thick, add a little more water, one tablespoon at a time.
Tip: Use room temperature egg and water for better mixing. -
Heat the pan and cook pancakes.
Heat a non-stick skillet or griddle over medium heat. Add a small amount of cooking oil or butter and spread it evenly. Pour about 1/4 cup of batter onto the pan for each pancake. Cook for 2-3 minutes until bubbles form on the surface and edges look set. Flip carefully and cook the other side for another 2 minutes until golden brown.
Tip: Avoid pressing down on pancakes while cooking to keep them fluffy. -
Serve with strawberry compote.
Place the cooked pancakes on plates and spoon the warm strawberry compote over them. Enjoy immediately for the best taste and texture.
Tip: Add a dollop of Greek yogurt or a sprinkle of nuts for extra flavor and texture.
Pro tips
- Use a non-stick pan and moderate heat to prevent pancakes from burning.
- Let the batter rest for 5 minutes before cooking to improve texture.
