Ingredients
- Whey protein powder 1 scoop
- Egg whites 4 large
- Rolled oats 1/4 cup
- Baking powder 1/2 teaspoon
- Raspberries 1/2 cup
- Sugar-free syrup 2 tablespoons
- Butter or oil 1 teaspoon
Method
-
Prepare Ingredients.
Gather all ingredients. Measure out 1 scoop of whey protein powder, 4 large egg whites (about 200g), 1/4 cup of rolled oats, 1/2 teaspoon baking powder, 1/2 cup raspberries, and 2 tablespoons sugar-free syrup. Have a teaspoon of butter or oil ready for cooking.
Tip: Use a kitchen scale for accurate measuring of oats and egg whites. -
Make Oat Flour.
Place the rolled oats into a blender or food processor and blend until they become a fine flour. This will help make the pancakes smoother and fluffier.
Tip: If you don't have a blender, you can use pre-ground oat flour. -
Mix Wet Ingredients.
In a medium bowl, whisk the egg whites until slightly frothy. Then add the whey protein powder and continue whisking until fully combined and smooth.
Tip: Whisking the egg whites first helps create a lighter pancake texture. -
Combine Dry and Wet Ingredients.
Add the oat flour and baking powder to the wet mixture. Stir gently until you get a smooth batter with no lumps. The batter should be thick but pourable.
Tip: Avoid overmixing to keep pancakes tender. -
Cook Pancakes.
Heat a non-stick skillet over medium heat and add the teaspoon of butter or oil. Pour about 1/4 cup of batter per pancake onto the skillet. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown and cooked through.
Tip: Cook pancakes on medium heat to avoid burning and ensure even cooking. -
Serve with Toppings.
Place cooked pancakes on plates. Top each serving with 1/2 cup raspberries and drizzle 1 tablespoon of sugar-free syrup over the pancakes.
Tip: Add extra raspberries or syrup to taste if desired.
Pro tips
- Use fresh or thawed raspberries for best flavor and texture.
- If batter is too thick, add a tablespoon of water or unsweetened almond milk to loosen it.
