Ingredients
- Rice cakes 2 pieces
- Hummus 3 tbsp
- Cucumber, sliced 1/2 cup
Method
-
Prepare the cucumber.
Wash the cucumber thoroughly under running water. Using a sharp knife, slice the cucumber into thin rounds about 1/8 inch thick. Set aside.
Tip: For extra crunch, you can chill the cucumber slices in the fridge before assembling. -
Assemble the rice cakes.
Place the 2 rice cakes on a clean plate. Using a spoon or butter knife, evenly spread 3 tablespoons (about 42g) of hummus over the top surface of each rice cake.
Tip: Spread the hummus gently to avoid breaking the rice cakes. -
Add cucumber slices.
Arrange the sliced cucumber evenly on top of the hummus-covered rice cakes. You can overlap slices slightly to cover the surface.
Tip: For extra flavor, sprinkle a pinch of salt or a dash of black pepper on the cucumber slices.
Pro tips
- Use fresh, firm cucumbers for the best texture.
- If you prefer, substitute the rice cakes with whole grain crackers for a different crunch.
