Ingredients
- chicken breast (roasted) 6 oz
- potatoes 1.5 cups
- skim milk 1/4 cup
- green beans 1 cup
- butter 1 tbsp
- salt to taste
- black pepper to taste
Method
-
Prepare the Chicken.
Preheat your oven to 375°F (190°C). Lightly season the 6 oz chicken breast with salt and pepper. Place it on a baking tray lined with foil or parchment paper. Roast in the oven for about 25-30 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
Tip: Use a meat thermometer to check doneness for perfectly cooked chicken. -
Prepare the Potatoes.
While the chicken roasts, peel and chop about 1.5 cups of potatoes into even pieces. Place them in a pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes until the potatoes are tender and easily pierced with a fork.
Tip: Start potatoes in cold water to ensure even cooking. -
Mash the Potatoes.
Drain the cooked potatoes well and return them to the pot. Add 1/4 cup skim milk and 1 tablespoon butter (optional) for creaminess. Mash the potatoes using a potato masher or fork until smooth. Season with salt and pepper to taste.
Tip: Warm the milk slightly before adding to keep the potatoes hot and creamy. -
Steam the Green Beans.
While the potatoes cook, rinse and trim 1 cup of green beans. Place them in a steamer basket over boiling water and cover. Steam for 5-7 minutes until tender but still crisp. Alternatively, you can microwave them with a little water in a covered dish for 3-4 minutes.
Tip: Avoid overcooking green beans to maintain their bright color and crunch. -
Plate and Serve.
Slice the roasted chicken breast if desired. On a plate, arrange the mashed potatoes, steamed green beans, and chicken breast. Add extra seasoning or a drizzle of olive oil if you like. Serve warm and enjoy your wholesome meal!
Tip: Let the chicken rest for 5 minutes after roasting to keep it juicy.
