Ingredients
- Salmon fillet 5 oz
- Sweet potato 1 large
- Green beans 1.5 cups
- Butter 1 tsp
- Garlic 1 clove
Method
-
Prepare the Sweet Potato.
Preheat your oven to 400°F (200°C). Wash the sweet potato thoroughly and pat it dry. Pierce the sweet potato several times with a fork to allow steam to escape during baking. Place it on a baking sheet lined with foil or parchment paper.
Tip: Piercing the sweet potato prevents it from bursting in the oven. -
Bake the Sweet Potato.
Place the sweet potato in the preheated oven and bake for about 35 minutes, or until it is soft when pierced with a fork. While the sweet potato bakes, you can prepare the other ingredients.
Tip: Check the potato at 30 minutes to avoid overcooking. -
Prepare the Green Beans.
Trim the ends of the green beans by snapping or cutting them off. Rinse the green beans under cold water. To steam, fill a pot with about an inch of water and bring it to a boil. Place a steamer basket over the boiling water, add the green beans, cover with a lid, and steam for about 5-7 minutes until tender but still crisp.
Tip: Do not over-steam the green beans to keep their vibrant color and crunch. -
Cook the Salmon.
While the green beans steam, heat a non-stick skillet over medium heat. Add the butter and minced garlic to the pan and sauté for about 30 seconds until fragrant. Place the salmon fillet skin-side down (if skin-on) in the pan. Cook for about 4-5 minutes without moving it to get a nice sear. Flip the salmon carefully and cook for another 3-4 minutes until it is cooked through and flakes easily with a fork.
Tip: Use a spatula to gently lift the salmon to check if it releases easily before flipping. -
Assemble and Serve.
Once the sweet potato is baked, slice it open lengthwise and fluff the inside with a fork. Plate the salmon fillet alongside the baked sweet potato and steamed green beans. Optionally, you can add a small pat of butter on the sweet potato for extra richness.
Tip: Serve immediately while everything is warm for the best taste.
Pro tips
- To check if salmon is done, it should flake easily with a fork and have an opaque appearance.
- If you prefer, you can microwave the sweet potato for 5-7 minutes instead of baking to save time.
