Ingredients
- Salmon fillet 5 oz
- Sweet potato 1 large
- Green beans 1 cup
- Butter 1 tsp
- Salt to taste
- Black pepper to taste
- Olive oil 1 tsp
Method
-
Prepare the sweet potato.
Peel the sweet potato and cut it into evenly sized chunks, about 1 to 1.5 inches. This helps them cook evenly and faster.
Tip: Use a sharp knife and be careful while peeling and chopping. -
Cook the sweet potato.
Place the chopped sweet potato in a pot and cover with cold water. Add a pinch of salt. Bring to a boil over high heat, then reduce to medium and cook until tender when pierced with a fork, about 15 minutes.
Tip: Start with cold water to ensure even cooking. -
Steam the green beans.
While the sweet potato cooks, rinse and trim the ends of the green beans. Place them in a steamer basket over boiling water, cover, and steam for about 5-7 minutes until tender but still crisp.
Tip: If you don't have a steamer basket, place the beans in a colander over a pot of boiling water. -
Mash the sweet potato.
Once the sweet potato is tender, drain the water and return the potatoes to the pot. Add 1 teaspoon of butter and mash with a potato masher or fork until smooth. Season with salt and pepper to taste.
Tip: Add a splash of milk or cream if you want a creamier texture. -
Cook the salmon.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat. Season the salmon fillet with salt and pepper. Place the salmon skin-side down (if skin-on) and cook for about 4-5 minutes, then flip and cook for another 3-4 minutes until the fish flakes easily with a fork.
Tip: Do not move the salmon too much while cooking to get a nice crust. -
Plate and serve.
Place the mashed sweet potato on your plate, add the steamed green beans beside it, and place the cooked salmon fillet on top or to the side. Optionally, season the green beans with a little salt or a squeeze of lemon.
Tip: Serve immediately while everything is warm.
Pro tips
- To check if salmon is cooked, it should flake easily and be opaque in the center.
- Make sure not to overcook the sweet potato to keep the mash creamy.
- Steaming green beans preserves their bright color and nutrients.
