- whole grain English muffin 1 piece
- olive oil 1 tsp
- spinach 1/2 cup
Method
-
Prepare Ingredients.
Gather all your ingredients. Crack the 3 large eggs into a bowl and whisk them together until the yolks and whites are fully combined. Chop the smoked turkey breast into small bite-sized pieces. Rinse the spinach under cold water and pat dry.
Tip: Whisking the eggs well will help make your scrambled eggs fluffy. -
Toast the English Muffin.
Split the whole grain English muffin in half using a knife. Place the halves in a toaster or toaster oven and toast until golden brown and crisp, about 3-4 minutes.
Tip: Toast the muffin first so it’s ready when your eggs are done. -
Cook Spinach.
Heat a non-stick skillet over medium heat. Add half a teaspoon of olive oil to the pan. Once warm, add the spinach and sauté for 2-3 minutes until wilted but still bright green. Remove spinach from the pan and set aside.
Tip: Cook spinach quickly to preserve nutrients and color. -
Cook Smoked Turkey.
In the same skillet, add the remaining half teaspoon of olive oil. Add the chopped smoked turkey breast and cook for 2 minutes, stirring occasionally, until heated through and slightly browned.
Tip: Use medium heat to avoid drying out the turkey. -
Scramble the Eggs.
Pour the whisked eggs into the skillet with the turkey. Let them sit undisturbed for about 20 seconds until they start to set at the edges. Using a spatula, gently push the eggs from the edges toward the center, creating soft folds. Add the cooked spinach back into the eggs. Continue gently stirring and folding the eggs until fully cooked but still moist and soft, about 2-3 minutes.
Tip: Remove the pan from heat just before the eggs look fully cooked, as they will continue to cook from residual heat. -
Serve.
Place the toasted English muffin halves on a plate. Spoon the scrambled eggs with smoked turkey and spinach on the side or on top of the muffin halves. Serve immediately while warm.
Tip: Add a sprinkle of black pepper or fresh herbs if desired for extra flavor.
