Ingredients
- firm tofu 150 g
- chopped bell peppers 1/2 cup
- olive oil 1 tbsp
- nutritional yeast 1 tbsp
- turmeric 1/4 tsp
- black pepper to taste
Method
-
Prepare the tofu.
Remove the tofu from its packaging and drain any excess liquid. Wrap the tofu block in a clean kitchen towel or paper towels and gently press it for about 5 minutes to remove excess moisture. This helps the tofu crumble better and absorb flavors.
Tip: Use a tofu press or place a heavy pan on top to press the tofu faster and more evenly. -
Chop the bell peppers.
Wash the bell peppers thoroughly. Remove the stems, seeds, and membranes. Chop into small, bite-sized pieces about 1/2 inch in size. Set aside.
Tip: Use a sharp knife to make clean cuts and avoid bruising the peppers. -
Crumble the tofu.
Using your hands or a fork, crumble the pressed tofu into small pieces resembling scrambled eggs. Aim for a coarse texture with some small chunks.
Tip: Avoid over-crumbling to keep some texture in the dish. -
Heat the oil and sauté peppers.
Place a non-stick skillet or frying pan over medium heat. Add 1 tablespoon of olive oil and let it warm for about 30 seconds. Add the chopped bell peppers and sauté for 4-5 minutes until they soften but still retain some crunch.
Tip: Stir occasionally to prevent sticking or burning. -
Cook the tofu scramble.
Add the crumbled tofu to the pan with the peppers. Sprinkle turmeric and black pepper to taste. Stir well to combine and cook for another 4-5 minutes, stirring frequently, until the tofu is heated through and slightly golden.
Tip: Turmeric gives a nice yellow color mimicking scrambled eggs; add gradually to control color intensity. -
Add nutritional yeast and finish.
Sprinkle 1 tablespoon of nutritional yeast over the tofu scramble. Stir well to incorporate. Taste and adjust seasoning with more black pepper if desired. Remove from heat.
Tip: Nutritional yeast adds a savory, cheesy flavor and boosts protein content. -
Serve warm.
Transfer the scrambled tofu with bell peppers to a plate or bowl. Enjoy immediately as a wholesome breakfast or light meal.
Tip: Pair with whole grain toast or fresh salad for a complete meal.
