Ingredients

  • Tuna steak 6 oz
  • Cauliflower rice 1 cup
  • Zucchini 1 medium
  • Olive oil 1 tbsp
  • Lemon juice to taste
  • Salt to taste
  • Black pepper to taste

Method

  1. Prepare ingredients. Rinse the tuna steak under cold water and pat dry with paper towels. Slice the zucchini into thin rounds. If using fresh cauliflower, pulse florets in a food processor until they resemble rice grains. Measure out 1 cup of cauliflower rice.
Tip: Drying the tuna well helps achieve a good sear.
  2. Season the tuna. Lightly season both sides of the tuna steak with salt and freshly ground black pepper. Set aside while you prepare the vegetables.
Tip: Season just before cooking to keep the fish fresh.
  3. Cook the cauliflower rice. Heat half a tablespoon of olive oil in a non-stick skillet over medium heat. Add the cauliflower rice and sauté for about 5-7 minutes, stirring occasionally, until tender but not mushy. Season with a pinch of salt and pepper. Remove from heat and keep warm.
Tip: Avoid overcrowding the pan so the cauliflower rice cooks evenly.
  4. Sauté the zucchini. In the same skillet, add the remaining half tablespoon of olive oil and heat over medium heat. Add the sliced zucchini and sauté for 3-4 minutes until they are tender and slightly golden. Season with salt and pepper to taste. Remove from heat and set aside.
Tip: Sauté zucchini quickly to keep it tender-crisp.
  5. Sear the tuna steak. Heat a clean skillet or cast-iron pan over high heat until very hot. Add a small drizzle of olive oil if needed. Place the tuna steak in the pan and sear for about 1.5 to 2 minutes on each side for medium-rare, or longer if you prefer it more cooked. Avoid moving the steak while searing to get a nice crust.
Tip: Use tongs to gently flip the tuna to avoid breaking it.
  6. Plate and finish. Place the cauliflower rice on a plate, arrange the sautéed zucchini on the side, and top with the seared tuna steak. Drizzle fresh lemon juice over the tuna and vegetables. Add additional salt and pepper if desired. Serve immediately.
Tip: Lemon juice brightens the flavors and adds freshness.

Pro tips

  • Use a very hot pan to sear the tuna quickly and lock in moisture.
  • Pat the tuna dry before cooking to achieve a better crust.
