Prepare Ingredients.
Gather all ingredients. Peel and devein the shrimp if not already done. Slice the zucchini into thin rounds. Mince the garlic clove finely. Measure out the cooked whole wheat pasta and tomato basil marinara sauce.
Tip: If your pasta is not cooked yet, start boiling water now to cook it while preparing other ingredients. -
Cook the Shrimp.
Heat the olive oil in a large skillet over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant, but not browned. Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side until the shrimp turn pink and opaque. Remove shrimp from the skillet and set aside.
Tip: Do not overcrowd the pan to ensure shrimp cook evenly and get a nice sear. -
Sauté the Zucchini.
In the same skillet, add the sliced zucchini. Cook for 3-4 minutes, stirring occasionally, until zucchini is tender but still slightly crisp. Season lightly with salt and pepper if desired.
Tip: Avoid overcooking zucchini to keep its texture and nutrients intact. -
Combine Pasta and Sauce.
Add the cooked whole wheat pasta and tomato basil marinara sauce to the skillet with zucchini. Stir gently to combine and heat through for 2 minutes.
Tip: If the sauce is too thick, add a splash of pasta cooking water to loosen it. -
Add Shrimp Back and Serve.
Return the cooked shrimp to the skillet. Stir everything together gently and cook for an additional 1-2 minutes to combine flavors. Taste and adjust seasoning if needed. Serve hot.
Tip: Garnish with fresh basil or a sprinkle of parmesan cheese if desired.
Pro tips
- Use a non-stick skillet to prevent shrimp and vegetables from sticking and to reduce the amount of oil needed.
- Cook pasta al dente (firm to the bite) to maintain texture when combined with sauce.
