Ingredients
- shrimp peeled and deveined 6 oz
- jasmine rice 1 cup
- mixed stir-fry vegetables 2 cups
- soy sauce low sodium 1 tbsp

Prepare the Jasmine Rice.
If you haven't cooked the jasmine rice yet, rinse 1/2 cup of uncooked jasmine rice under cold water until the water runs clear. Then, combine the rinsed rice with 3/4 cup water in a small pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork. Alternatively, use pre-cooked jasmine rice if available.
Tip: Rinsing the rice removes excess starch and prevents it from becoming sticky. -
Prepare the Shrimp.
Make sure your shrimp are fully peeled and deveined. Pat them dry with paper towels to remove excess moisture. This helps them sear better during cooking.

Heat the Pan and Cook Vegetables.
