Ingredients

- Cauliflower rice 1 cup
- Mixed stir-fry vegetables 1.5 cups

Prepare Ingredients.
Make sure your shrimp is peeled and deveined. If using fresh cauliflower, pulse it in a food processor until it resembles rice grains. Wash and chop your mixed vegetables into bite-sized pieces if not pre-cut.
Tip: If using frozen cauliflower rice, thaw it slightly before cooking to avoid excess water. -
Heat the Pan and Cook Shrimp.
Place a large non-stick skillet or wok over medium-high heat. Add half the olive oil. Once hot, add the shrimp in a single layer. Cook for about 2 minutes on one side until pink, then flip and cook another 1-2 minutes until fully opaque and cooked through. Remove shrimp from pan and set aside.

Cook Vegetables.
Add the remaining olive oil to the pan. Toss in the mixed vegetables and stir-fry for about 3-4 minutes until they are tender-crisp. Stir frequently to prevent burning.

Add Cauliflower Rice and Soy Sauce.
