Ingredients

  • Egg whites 150 g
  • Fresh spinach 50 g
  • Olive oil 1 tsp
  • Salt to taste
  • Black pepper to taste

Method

  1. Prepare the spinach. Wash the fresh spinach leaves thoroughly under cold running water to remove any dirt. Then, roughly chop the spinach into smaller pieces so it cooks evenly.
Tip: Make sure to dry the spinach using a salad spinner or paper towels to avoid excess water in the omelette.
  2. Heat the pan and sauté spinach. Place a non-stick frying pan over medium heat and add 1 teaspoon of olive oil. Once the oil is warm, add the chopped spinach. Stir it gently and cook for about 1-2 minutes until wilted. Then, remove the spinach from the pan and set aside.
Tip: Use a non-stick pan to prevent the egg whites from sticking and make flipping easier.
  3. Whisk the egg whites. In a bowl, pour the 150g of egg whites. Whisk them gently with a fork or whisk until slightly frothy. This will make the omelette light and fluffy.
Tip: Avoid over whisking; just enough to combine and add air.
  4. Cook the egg whites. Return the pan to medium heat and add a little more olive oil if needed. Pour the egg whites into the pan, tilting the pan to spread them evenly. Let the egg whites cook undisturbed for about 2 minutes until they start to set but the top is still slightly runny.
Tip: Keep the heat moderate to avoid browning the egg whites; we want a tender texture.
  5. Add spinach and season. Evenly spread the cooked spinach over one half of the omelette. Sprinkle salt and black pepper to taste over the entire omelette.
Tip: Season gently and adjust after cooking if needed.
  6. Fold and finish cooking. Using a spatula, carefully fold the omelette in half over the spinach filling. Let it cook for another 1-2 minutes to ensure the egg whites are fully set and the spinach is warmed through.
Tip: Slide the omelette gently to avoid tearing.
  7. Serve. Carefully slide the omelette onto a plate. Serve immediately while hot for the best taste and texture.
Tip: Pair with whole grain toast or fresh fruit for a balanced meal.

Pro tips

  • Use fresh spinach for the best flavor and texture; frozen spinach can be watery.
  • If you prefer, add a small amount of your favorite herbs like chives or parsley for extra flavor.
