Ingredients
- Firm tofu 120 g
- Mixed vegetables 150 g
- Cooked quinoa 100 g
- Olive oil 1 tbsp
- Soy sauce (low sodium) 1 tsp
Method
-
Prepare the tofu.
Drain the firm tofu and gently press it between paper towels or a clean kitchen towel to remove excess moisture. Then cut the tofu into 1-inch cubes. Removing moisture helps the tofu become crispy when cooked.
Tip: Pressing tofu well is key for a crispy texture. -
Prepare the vegetables.
Wash the mixed vegetables thoroughly. Cut broccoli into small florets, peel and slice carrots into thin rounds, and slice bell peppers into thin strips. This ensures even cooking.
Tip: Try to cut vegetables into similar-sized pieces for uniform cooking. -
Heat the pan and cook tofu.
Heat a non-stick skillet or wok over medium-high heat. Add half the olive oil (about 1/2 tbsp). Once hot, add the tofu cubes in a single layer. Cook without stirring for 3-4 minutes until the bottom is golden brown. Then gently turn the tofu to brown all sides, about 5-6 minutes total. Remove tofu from the pan and set aside.
Tip: Avoid overcrowding the pan to help tofu crisp up better. -
Stir-fry vegetables.
In the same pan, add the remaining olive oil. Add the mixed vegetables and stir-fry for about 5 minutes, stirring frequently, until they are tender-crisp. You want the vegetables cooked but still bright and slightly crunchy.
Tip: Keep stirring to prevent burning and ensure even cooking. -
Combine tofu and season.
Return the cooked tofu to the pan with the vegetables. Add the low sodium soy sauce and gently toss everything together to coat evenly. Cook for another 1-2 minutes to heat through and blend flavors.
Tip: Taste and adjust seasoning if needed, but soy sauce should provide enough saltiness. -
Serve with quinoa.
Place the cooked quinoa on a serving plate or bowl. Spoon the tofu and vegetable stir-fry on top or beside the quinoa. Serve immediately while hot.
Tip: Fluff quinoa with a fork before serving for a light texture.
Pro tips
- Press tofu well to get a crispy texture when stir-frying.
