Ingredients

  • Tilapia fillet 5 oz
  • Cauliflower florets 1 cup
  • Asparagus spears 1 cup
  • Butter 1 tsp
  • Salt to taste
  • Black pepper to taste
  • Olive oil 1 tsp
  • Garlic powder 1/4 tsp
  • Milk or cream 2 tbsp

Method

  1. Prepare the tilapia. Preheat your oven to 375°F (190°C). Pat the tilapia fillet dry with paper towels. Lightly brush both sides with olive oil. Season with salt, pepper, and garlic powder if using. Place the fillet on a baking sheet lined with parchment paper or lightly greased.
Tip: Drying the fish helps it bake evenly and develop a nice texture.
  2. Bake the tilapia. Put the baking sheet in the oven and bake the tilapia for about 12-15 minutes. The fish is done when it flakes easily with a fork and is opaque all the way through.
Tip: Check the fish at 12 minutes to avoid overcooking.
  3. Steam the cauliflower. While the fish is baking, place the cauliflower florets in a steamer basket over boiling water. Cover and steam for about 8-10 minutes until the cauliflower is very tender.
Tip: If you don’t have a steamer basket, you can boil the cauliflower in a small pot of water for 8 minutes.
  4. Steam the asparagus. Trim the woody ends off the asparagus. Add asparagus spears to the steamer basket or a separate pot and steam for about 4-5 minutes until bright green and tender-crisp.
Tip: Do not overcook asparagus to keep a nice crunch and vibrant color.
  5. Make the cauliflower mash. Transfer the steamed cauliflower to a blender or food processor. Add the butter and milk or cream if using. Blend until smooth and creamy. Season with salt and pepper to taste.
Tip: If you prefer a chunkier texture, mash the cauliflower with a fork or potato masher instead.
  6. Plate and serve. Place the cauliflower mash on your plate. Arrange the baked tilapia fillet beside it and add the steamed asparagus. Optionally, add a small pat of butter on the asparagus for extra flavor.
Tip: Serve immediately while everything is warm for the best taste.

Pro tips

  • Use fresh tilapia for the best flavor and texture.
  • To speed up cooking, you can steam cauliflower and asparagus together but add asparagus later as it cooks faster.
