Ingredients
- Firm tofu 150 g
- Mixed bell peppers 1 cup
- Onion 1/2 cup
- Olive oil 1 tbsp
- Whole wheat bread 2 slices
Method
-
Prepare the tofu.
Drain the firm tofu well by pressing it gently between paper towels or a clean kitchen towel to remove excess moisture. Then crumble the tofu into small pieces using your hands or a fork. This will give it a scrambled egg-like texture.
Tip: Pressing the tofu helps it absorb flavors better and improves the texture when cooking. -
Chop the vegetables.
Chop the mixed bell peppers into small bite-sized pieces and finely chop the onion to about half a cup. Having evenly sized pieces ensures they cook evenly.
Tip: Use a sharp knife to make chopping easier and safer. -
Heat the olive oil.
Place a non-stick skillet or frying pan over medium heat. Add 1 tablespoon of olive oil and let it warm up for about 1 minute until it shimmers but does not smoke.
Tip: If the oil starts to smoke, reduce the heat to avoid burning. -
Sauté the onions and bell peppers.
Add the chopped onions to the pan and sauté for about 3 minutes until they start to become translucent. Then add the chopped bell peppers and cook for another 4 minutes until the vegetables are tender but still slightly crisp.
Tip: Stir occasionally to prevent sticking and ensure even cooking. -
Cook the scrambled tofu.
Add the crumbled tofu to the pan with the vegetables. Stir well to combine and cook for 3-4 minutes, stirring frequently. This allows the tofu to heat through and absorb flavors from the vegetables and oil.
Tip: Season with salt and pepper to taste if desired. -
Toast the whole wheat bread.
While the tofu and vegetables cook, place 2 slices of whole wheat bread in a toaster and toast to your preferred level of crispness.
Tip: Toast the bread last so it stays warm and crispy when served. -
Serve.
Transfer the scrambled tofu and mixed vegetables onto a plate. Serve alongside the toasted whole wheat bread. Enjoy your balanced and delicious breakfast!
Tip: Add a sprinkle of fresh herbs or hot sauce for extra flavor if you like.
