Ingredients
- Canned tuna in water 5 oz
- Avocado 1/2 medium
- Mixed greens 1 cup
- Light mayonnaise 1 tbsp
Method
-
Prepare the avocado.
Cut the avocado in half lengthwise. Remove the pit carefully using a spoon or knife. Scoop out some of the flesh from the half you will stuff, leaving a small border to keep the shape intact. Place the scooped avocado flesh in a small bowl.
Tip: Use a ripe avocado that yields slightly to gentle pressure for best creaminess. -
Mix the tuna salad.
Drain the canned tuna well to remove excess water. Add the tuna to the bowl with the scooped avocado flesh. Add 1 tablespoon of light mayonnaise. Mix gently until combined but still chunky.
Tip: Mix gently to keep some texture in the tuna salad. -
Assemble the stuffed avocado.
Spoon the tuna salad mixture into the hollow of the avocado half. Fill it generously and level the top with the back of the spoon.
Tip: If desired, garnish with a sprinkle of black pepper or fresh herbs. -
Prepare the mixed greens.
Place 1 cup of washed and dried mixed greens on a plate beside the stuffed avocado. You can drizzle a little lemon juice or your favorite light dressing over the greens if you like.
Tip: Dry the greens well after washing to keep them crisp.
Pro tips
- Use ripe but firm avocado to avoid it becoming mushy when scooping.
- Drain tuna thoroughly to prevent watery salad.
