Ingredients
- Ground turkey 5 oz
- Mixed kidney and black beans 1/2 cup
- Brown rice 3/4 cup
- Diced tomatoes 1/2 cup
- Chili powder 1 tsp
- Olive oil 1 tsp
Method
-
Prepare Ingredients.
Gather all ingredients. If using canned beans, drain and rinse them under cold water to reduce sodium. Measure out the brown rice if already cooked.
Tip: Use pre-cooked brown rice or cook it ahead to save time. -
Heat Olive Oil.
Place a medium-sized skillet or saucepan over medium heat. Add 1 teaspoon of olive oil and let it warm for about 30 seconds until shimmering but not smoking.
Tip: Use a pan with a lid for simmering later. -
Cook Ground Turkey.
Add the 5 oz of ground turkey to the pan. Use a wooden spoon or spatula to break the meat into small pieces. Cook for about 5-7 minutes, stirring occasionally, until the turkey is no longer pink and cooked through.
Tip: Cook thoroughly to an internal temperature of 165°F (74°C) for safety. -
Add Beans, Tomatoes, and Chili Powder.
Stir in the 1/2 cup of mixed kidney and black beans, 1/2 cup diced tomatoes, and 1 teaspoon chili powder. Mix well to combine all ingredients evenly.
Tip: Adjust chili powder based on your preferred spice level. -
Simmer the Chili.
Reduce the heat to low and cover the pan with a lid. Let the chili simmer gently for 10 minutes, stirring occasionally to prevent sticking. This allows flavors to meld together.
Tip: If the chili looks too thick, add a splash of water or broth. -
Warm Brown Rice.
While the chili simmers, warm the 3/4 cup cooked brown rice in a microwave or on the stove. If microwaving, place rice in a microwave-safe bowl, cover loosely, and heat for 1-2 minutes until hot.
Tip: Fluff rice with a fork before serving for better texture. -
Serve.
Spoon the warm brown rice onto plates or bowls. Top with the turkey chili mixture. Optionally garnish with fresh herbs like cilantro or a dollop of yogurt.
Tip: Serve with a side of steamed vegetables or a fresh salad for a complete meal.
