- Ground turkey 6 oz
- Romaine lettuce leaves 4 large leaves
- Brown rice 1/2 cup
- Mixed vegetables 1 cup

Prepare Ingredients.
Wash and dry the romaine lettuce leaves carefully to avoid tearing. Chop the mixed vegetables (bell peppers, carrots, onions) into small, even pieces. Make sure the brown rice is cooked and ready to use.
Tip: Dry lettuce leaves well using a salad spinner or paper towels to keep them crisp. -
Cook the Vegetables.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat. Add the chopped mixed vegetables and sauté for about 5 minutes until they are tender but still slightly crisp.
