Ingredients
- turkey sausage 4 oz
- sweet potato 1 medium
- onion 1/4 cup
- bell peppers 1/2 cup
- olive oil 1 tsp
Method
-
Prepare Ingredients.
Wash and peel the sweet potato, then dice it into small, evenly sized cubes about 1/2 inch. Dice the onion and bell peppers into similar small pieces. If your turkey sausage is in casing, remove it and crumble the sausage into bite-sized pieces.
Tip: Cutting the vegetables uniformly helps them cook evenly. -
Cook Turkey Sausage.
Heat a large non-stick skillet over medium heat. Add the turkey sausage pieces and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove the cooked sausage from the skillet and set aside, leaving the rendered fat in the pan.
Tip: If your turkey sausage is lean and doesn’t release much fat, add a small splash of olive oil to prevent sticking. -
Cook Vegetables.
Add 1 teaspoon of olive oil to the skillet with the sausage fat. Add the diced sweet potatoes first, as they take the longest to cook. Stir occasionally and cook for about 8 minutes until they start to soften.
Tip: Cover the skillet with a lid for part of the cooking time to help the sweet potatoes steam and soften faster. -
Add Onions and Bell Peppers.
Add the diced onions and bell peppers to the skillet with the sweet potatoes. Stir well to combine all ingredients. Continue cooking for another 5 minutes, stirring occasionally, until the onions become translucent and the peppers soften.
Tip: If the vegetables start to stick, add a splash of water or lower the heat slightly. -
Combine and Finish.
Return the cooked turkey sausage to the skillet. Stir everything together and cook for an additional 1-2 minutes to heat through and blend the flavors. Taste and season with salt and pepper as desired.
Tip: For extra flavor, you can add a pinch of smoked paprika or fresh herbs like parsley at this stage.
Pro tips
- Use a non-stick skillet to reduce the need for extra oil and prevent sticking.
- Cook the sweet potatoes first as they require the longest time to become tender.
