Vegetable and Chickpea Curry with Quinoa

Ingredients

  • Cooked chickpeas 1 cup
  • Mixed vegetables (zucchini, tomatoes, spinach) 2 cups
  • Light coconut milk 1/4 cup
  • Cooked quinoa 1/2 cup
  • Curry powder 1 tablespoon
  • Onion 1/2 medium
  • Garlic cloves 2 cloves
  • Olive oil 1 tablespoon
  • Salt to taste
  • Black pepper to taste
  • Water or vegetable broth 1/2 cup

Method

  1. Prepare ingredients. Wash and chop the mixed vegetables: dice the zucchini and tomatoes into bite-sized pieces, and roughly chop the spinach. Finely chop half an onion and mince two garlic cloves.
