Method

Prepare Ingredients.
Wash the bell peppers and dice them into small pieces. Cut the avocado into quarters and remove one quarter. Slice the avocado quarter into thin slices. Crack the eggs into a bowl and whisk them until the yolks and whites are fully combined.
Tip: Use a fork or whisk to beat the eggs well; this helps make the omelette fluffy. -
Cook the Bell Peppers.
Heat a non-stick skillet over medium heat. Add the teaspoon of olive oil and swirl to coat the pan. Add the diced bell peppers and sauté for about 2-3 minutes until they soften slightly but still retain some crunch.
Tip: Don’t overcook the peppers; they should be tender but still colorful and slightly crisp. -
Make the Omelette.
Pour the whisked eggs evenly over the sautéed bell peppers in the skillet. Reduce heat to medium-low. Let the eggs cook undisturbed for about 2-3 minutes until the edges start to set. Use a spatula to gently lift the edges and let uncooked egg flow underneath. When the top is mostly set but still slightly runny, season with salt and black pepper.
Tip: Cooking on medium-low heat prevents the eggs from browning too much and keeps the omelette tender. -
Fold and Finish Cooking.
Carefully fold the omelette in half using a spatula. Let it cook for another minute to ensure the inside is fully cooked but still moist. Remove from heat and slide the omelette onto a plate.
Tip: If you prefer, you can cover the pan with a lid for 30 seconds to help cook the top without flipping. -
Toast the Bread and Assemble.
While the omelette is cooking, toast the two slices of whole wheat bread until golden brown. Place the avocado slices on top of the toast and lightly season with a pinch of salt and pepper. Serve the omelette alongside the avocado toast.
Tip: You can drizzle a little olive oil or a squeeze of lemon on the avocado for extra flavor.
